Chicken and Broccoli Stir-Fry

I found this recipe on Pinterest and it is very good.  Has lots of fresh ingredients and I am sure if you were not a broccoli lover you could substitute another vegetable easily.

Broccoli and Chicken Stir-Fry

2 c. broccoli florets
1 lb chicken breasts, cut into 1" pieces
2 tsp. cornstarch
2 tsp finely chopped ginger
1 c. chicken broth
2 cloves garlic, finely chopped
3 Tbsp soy sauce
2 tsp sugar

Spray skillet with cooking spray, heat to medium high heat.  Add chicken, garlic and ginger, fry 2-3 minutes or until chicken is brown.  Add 3/4 cup of broth, soy sauce, and sugar.  Cover and cook over medium heat 5 minutes , stirring twice.  Add broccoli.  Cover and cook 5 minutes, stirring occasionally until chicken is no longer pink in the center and broccoli is crisp/tender.  Mix cornstarch with remaining 1/4 cup of broth; stir into chicken mixture.  Cook, stirring frequently until sauce is thickened.  Photo below.
